The main purpose of the crystallization process is preserves the flavor and quality characteristics of honey. Crystallized honey also tastes richer because when it is in a crystallized state it takes longer to melt in your mouth. Crystallization is a natural process. The fact that it happens means your honey is pure, unadulterated, and processed correctly.

Crystallized honey has a soft caramel sweetness to it. Honey is only partially crystallized and this process forms two layers, keeping the crystallized layer on the bottom of the jar and a liquid on the top it.

We get our honey from the bees which extract nectar from the blossoms of a variety of floral sources.  In a blend of various other premium honey produced in the U.S. and Canada, our honey is light in color with a delicious and delicate flavor.

The two principal sugars in honey are fructose and glucose. The balance of these two major sugars causes the crystallization of honey. When glucose crystallizes, it separates from water and takes the form of tiny crystals.

Caution:
